Pia’s Turnip-Yam Bake
1 large yam
2 medium size turnips
3 Tbsp. olive oil
1 tsp. cardamom
½ tsp. tarragon (optional)
Peel and dice both turnips and yam. Place turnips in glass baking dish and cover with ½ the olive oil. Bake for 30 minutes. Add the yams, the tarragon, the cardamom, and the remainder of the olive oil. Bake another 45 minutes to 1 hour, until turnips and yams are soft. Serve.
